Thick Spaghetti Alla Puttanesca

(recipe serves 4 people)

Ingredients:

  • 6 Tablespoons of Extra Virgin Olive Oil
  • 2 Cloves of Garlic (Chopped)
  • 1 Pound of Tomato (Diced, Peeled, Seeded)
  • 3 Tablespoons of Capers 
  • 1/4 Teaspoon Red Chilli Pepper Flakes
  • Mediterranean Black Olives (May Substitute Black or Kalamata Olives)
  • 2 Tablespoons of Fresh Italian Parsley (Chopped)
  • 6 Anchovy Fillets (Chopped)

Directions:

(Takes 15 Minutes to Prepare Ingredients & 30 Minutes to Cook)

  • Bring a Large Pot of Water to Boil
  • Heat Olive Oil in a Medium Skillet Over Medium Heat
  • Add The Chopped Garlic to the Olive Oil & Sauté for 1-2 Minutes (or Until the Garlic Turns Golden in Color)
  • Add the Tomatoes & cook for 10 Minutes 
  • Add Capers, Pepper Flakes, & Olives -- Cook for 2 More Minutes
  • Meanwhile Cook The Spaghetti According to Package Directions 
  • Add 1 Tablespoon of Parsley & Anchovies to the Sauce -- Cook for 2 More Minutes
  • Add Salt to Taste
  • Drain Pasta, Add Sauce & Toss Well 
  • Sprinkle with Remaining Parsley
  • Serve and Enjoy!

Ingredients: (Serves 4 People)

  • 1 pound of spaghetti

  • 3 tablespoons of extra virgin olive oil

  • 6 oz of cubed Pancetta 

  • 1 clove of garlic

  • 2 tablespoons of grated Pecorino Romano cheese 

  • 1 full egg and 2 yolks

  • 4 tablespoons Grana Padano or grated Parmiggiano

  • Ground pepper and salt to taste

Directions:

Start By Cooking The Pasta...

  • Cook pasta in a large pot of slightly salted boiling water, until al dente
  • Once pasta is finished cooking, drain the water and set the pasta aside (keep warm by covering) 

While Pasta Is Cooking Prep and Cook The Ingredients & Sauce...

  • In a large skillet, over medium heat, warm the olive oil
  • Add the pancetta and the garlic and sauté for 3 minutes, or until the garlic begins to brown
  • Continue to cook the pancetta until it is brown and crispy 
  • Set aside
  • In a separate bowl combine both cheeses, egg, and yolks, and season with pepper

Final Steps...

  • Add the pasta to the cheese and egg mixture
  • Stir well until all of the pasta is evenly coated 
  • Stir in the pancetta and garlic
  • Serve and enjoy!

Spaghetti With Arugula, Walnut Pesto & Genuine Fulvi® Pecorino Romano Cheese

Ingredients:

  • 1 box of thin spaghetti

  • 3 cups of arugula

  • 2 tablespoons of packed parsley

  • 1/4 cup of walnut halves

  • 1/4 cup of grated Pecorino cheese 

  • 2 tablespoons of grated Parmigiano-Reggiano cheese

  • 1/4 cup of boiled potatoes 

  • 5 tablespoons of extra virgin olive oil

  • 1 clove of garlic

  • Pecorino cheese cut into sticks

  • Arugula leaves to taste

  • Salt to taste

Directions:

Start By Cooking The Pasta...

  • Cook pasta in a large pot of slightly salted boiling water, until al dente
  • Once pasta is finished cooking, drain the water and set the pasta aside (keep warm by covering) 

While Pasta Is Cooking Prep and Cook The Ingredients & Sauce...

  • Clean the arugula and peel the garlic (save some arugula to add to the pasta at the end of the process)
  • Process the arugula and garlic in a blender with the walnuts, parsley and boiled potatoes
  • Make sure to use short pulses with the blender so that the pesto doesn't heat up
  • With the blender motor running, add the grated Pecorino and Parmigiano cheese, and the olive oil in a stream (save the Pecorino sticksto add to the pasta at the end of the process)
  • Season pesto in the blender with salt and continue processing until the sauce is smooth

Final Steps...

  • Add the pesto sauce, Pecorino sticks, arugula leaves, and walnut halves to the spaghetti
  • Serve and Enjoy!

But, before we get into the full recipe, let us excite your taste buds a little by sharing a bit about this amazing cheese made by Forever Cheese (in their own words from their website)...

"This tangy, hard cheese is made from 100% sheep’s milk harvested in the countryside of Rome and produced nearby in our plant. Aged 10 months to 1 year and coated in black wax as per tradition, Fulvi® is never as hard or dry as a Pecorino Romano made in Sardinia. Ingredients:

  • 400 grams of Spaghetti Pasta
  • 75 grams of Genuine Fulvi® Pecorino Romano DOP by Forever Cheese
  • 1 Red hot chili pepper (type of your choice, we recommend cayenne pepper) 
  • 1 tbsp of extra virgin olive oil
  • 1 cup of white table wine
  • 1 teaspoon of black pepper
  • 100 grams of bacon or chopped prosciutto 
  • 35 grams of crushed canned tomatoes

Directions:

  • To prepare the Spaghetti Amatriciana first dice or cut the bacon into strips
  • Heat the olive oil, chopped bacon and chili pepper until the bacon is brown
  • As soon as the fat of the bacon becomes transparent, add the white wine and cook until the wine evaporates 
  • Once the wine has evaporated, drain and remove the bacon from the pan and set aside, covered to keep it warm
  • Add the tomatoes to the pan that the bacon was cooked in so that they can cook in the remaining fat from the bacon
  • Cook the tomatoes until they're tender and juicy
  • Cook the spaghetti, al dente (or to your liking)
  • Once pasta is cooked, drain and mix all of the ingredients together, stir well and sauté for a minute to blend everything together 
  • Grind desired amount of black pepper over your Spaghetti Amatriciana 
  • Finally, sprinkle plenty of Genuine Fulvi® Pecorino Romano DOP cheese on your final masterpiece!

Pasta With Fresh Tuna- An Original Graziani Family Recipe

Ingredients:

  • 1 lb of Fresh Tuna

  • 1 Eggplant

  • Olive Oil

  • Garlic

  • Basil

  • 1 lb of Fresh Tomatoes or 1 Can of Stewed Tomatoes

  • Black Olives

  • Red Bell Peppers (optional)

Directions:

Start By Cooking The Pasta...

  • Cook pasta in a large pot of slightly salted boiling water, until al dente
  • Once pasta is finished cooking, drain the water and set the pasta aside (keep warm by covering) 

While Pasta Is Cooking Prep and Cook The Ingredients & Sauce...

  • Dice and sear the tuna, then set aside
  • Dice the eggplant and sauté in 2 tbsp of olive oil, then set aside
  • Chop the garlic and basil and sauté in 2 tbsp of olive oil
  • Add tomatoes to the garlic and basil and let it simmer until thick  

Final Steps...

  • Add the tomato sause with the pasta
  • Add olives, eggplant and tuna to the pasta
  • (optional) add red pepper to taste
  • Mix well and serve

Graziani Family Original Recipe: Four Cheese Pasta

Ingredients:

  • 1 lb of fresh pasta
  • 1 cup of Parmesan Cheese
  • 3/4 cup of Gorgonzola Cheese
  • 1/2 cup of Fontina Cheese
  • 1/2 cup of Emmental Cheese
  • 2 cups of Milk or Cream

Directions:

  • Cook pasta in a large pot of slightly salted boiling water, until al dente 

While Pasta Is Cooking...

  • Cut Gorgonzola Cheese and Fontina Cheese into cubes
  • Shred Emmental Cheese
  • Warm milk in saucepan - do not let come to a boil
  • Add Gorgonzola Cheese, Fontina Cheese and Emmental Cheese with milk and stir 

Once Pasta is Finished Cooking...

  • Drain pasta, but make sure to preserve a cup of pasta water to use for mixing later
  • Mix pasta with cheese sauce, using some of the saved pasta water if needed
  • Top with parmesan cheese 
  • Serve and enjoy!

Graziani Family Recipe For Paccheri Pasta & Blue Marlin!

 

Ingredients:

  • 350 Grams of Paccheri Pasta

  • 1 Garlic Clove

  • 10 Grams of Parsley 

  • 20 Large Black Olives

  • 4 Grams of Salt 

  • 300 Grams of Blue Marlin

  • 250 Grams of Ripe Red Tomatoes 

  • 1 Spicy Chili (optional)

  • 2 Tablespoons of Olive Oil 

Directions:

Start By Cooking The Paccheri Pasta...

  • Cook pasta in a large pot of slightly salted boiling water, until al dente
  • Once pasta is finished cooking, drain the water and set the pasta aside (keep warm by covering) 

While Pasta Is Cooking Prep The Ingredients...

  • Cook tomatoes in warm water for approximately 2 minutes until they're soft
  • Remove Tomatoes from water, peel and cut into chunks
  • Prep the Blue Marlin by cutting it into strips and then cubes
  • Finely chop the parsley 
  • Clean the peppers, cut off the ends, and remove the seeds, then finely chop

Cook The Sauce With Blue Marlin

  • Sauté a clove of garlic, with 2 tbsp of olive oil, until slightly browned, then remove from pan (set aside for later)
  • Pan Cook the chunks of Blue Marlin - cook with medium heat for about 3-5 minutes
  • Add tomatoes and salt to taste
  • Let the Blue Marlin and tomatoes cook for 12-15 minutes
  • Add chopped parsley, peppers, black olives and garlic

Final Step...

  • Add the Paccheri Pasta with the sauce 
  • Serve while still hot and enjoy!

Original Graziani Family Recipe for Pasta With Pesto And Zucchini 

Ingredients:

  • 1 lb of fresh pasta
  • 2 tbsp olive oil
  • 2 large shredded zucchinis 
  • 1 package of pesto sauce (amount according to taste preference)
  • Salt (amount according to taste preference)
  • Parmesan cheese (amount according to taste preference)

Directions:

  • Cook pasta in a large pot of slightly salted boiling water, until al dente 

While Pasta Is Cooking...

  • Heat olive oil in a skillet
  • Add the 2 large shredded zucchini and salt (amount according to taste preference)  
  • Sauté until zucchini is a blond color 
  • Turn heat off and add pesto sauce (amount according to taste preference)

Once Pasta is Finished Cooking...

  • Drain pasta, but make sure to preserve a cup of pasta water to use for mixing later
  • Mix pasta with pesto and zucchini, using some of the saved pasta water if needed
  • Top with parmesan cheese 
  • Serve and enjoy!
