Thick Spaghetti Alla Puttanesca

(recipe serves 4 people)

Ingredients:

  • 6 Tablespoons of Extra Virgin Olive Oil
  • 2 Cloves of Garlic (Chopped)
  • 1 Pound of Tomato (Diced, Peeled, Seeded)
  • 3 Tablespoons of Capers 
  • 1/4 Teaspoon Red Chilli Pepper Flakes
  • Mediterranean Black Olives (May Substitute Black or Kalamata Olives)
  • 2 Tablespoons of Fresh Italian Parsley (Chopped)
  • 6 Anchovy Fillets (Chopped)

Directions:

(Takes 15 Minutes to Prepare Ingredients & 30 Minutes to Cook)

  • Bring a Large Pot of Water to Boil
  • Heat Olive Oil in a Medium Skillet Over Medium Heat
  • Add The Chopped Garlic to the Olive Oil & Sauté for 1-2 Minutes (or Until the Garlic Turns Golden in Color)
  • Add the Tomatoes & cook for 10 Minutes 
  • Add Capers, Pepper Flakes, & Olives -- Cook for 2 More Minutes
  • Meanwhile Cook The Spaghetti According to Package Directions 
  • Add 1 Tablespoon of Parsley & Anchovies to the Sauce -- Cook for 2 More Minutes
  • Add Salt to Taste
  • Drain Pasta, Add Sauce & Toss Well 
  • Sprinkle with Remaining Parsley
  • Serve and Enjoy!
