Recipe Summary

This simple pasta has a rich pesto flavor and sweet tomatoes.


  • 1 packet pesto

  • 2 cups sweet plum tomatoes

  • 1 1/2 cup aged ricotta or crumbled feta


Step 1

Dice tomatoes

Step 2

Cook pasta in a large pot of boiling salted water until al dente

Step 3

Drain pasta reserving one cup of water

Step 4

Add pesto to pasta and some pasta water if needed to keep creamy

Step 5

Add diced fresh tomatoes and cheese
