Recipe for Coconut Lime Bars + Bites by Renée Loux
This is one of the simplest and most satisfying treat to make, no fancy equipment required. Creamy coconut and bright, zesty lime pair together for the perfect balance of flavor and texture. All raw, all vegan, all delightful.
Yield: 12+ bars or bites
INGREDIENTS:
2/3 cup soaked cashews (soaked 2-4 hours in filtered water, drained and rinsed)
½ cup coconut oil
6 tablespoons lime juice
6 tablespoons maple syrup
2 tablespoons lime zest (organic limes please!)
½ teaspoon vanilla extract
small pinch unrefined sea salt
½ cup dried shredded coconut, plus ¼ cup to garnish
PROCEDURE:
1. In a high-speed blender or food processor, place all ingredients and blend at high speed until very smooth.
2. Grease a small baking dish with coconut oil. Spread mixture evenly into the dish and sprinkle with ¼ cup coconut.
3. Place in freezer until firm, 20-40 minutes. Transfer to fridge and store in a covered container until ready to serve.
